Freezer Cooking

Denise and I decided to do another freezer cooking session.  Several months ago, I introduced her to this program I use…MYFREEZEASY

Erin has multiple monthly freezer cooking meals which are organized along different themes (by the meat content, by the cooking method, by the allergies or special eating plans).  You can also mix and match from the categories to get a 5 meal plan.  She doubles each recipe and you can have a freezer full of meals for a busy time of your life.

I’m entering into my 2 week Internal Medicine service time and I wanted to be ready.  Denise loved the last time we did this (both did 4 meals) and ended up with 8 meals in the freezer so she came over a couple of weeks ago and picked out 5 meals.  I picked out 5 different ones and she came over to my house to assemble 20 meals (10 for each of our freezers).  We are expecting a big snow storm this evening so it was a good time to do it.  The only problem was going shopping yesterday was a little overwhelming and Denise picked up the last package of boneless chicken breasts at Food Lion this morning!

It took me about 2 hours to put my 10 meals together because I had to keep helping Denise figure out how to use my kitchen tools and getting out things for her to use.  Denise got one of her recipes done in that time.  In her defense, she had a lot more cans to open than I did and she had some trouble using my can opener.

She came back after picking up Elena and we knocked out her other 4 recipes in about 30 minutes.  So about 2 1/2 hours for 20 meals (really 21 because I put one of my recipes in the instant pot to cook while we were assembling) – and we all ate dinner around 6:45pm.

So, they are now in the freezer and my back is “barking” and I have the first day of a cold so will finish up with a list.

  • Instant Pot Russian Shredded Beef Sandwiches
  • 5 Ingredient Chili
  • Baked Teriyaki Chicken Drumsticks

  • BBQ Chicken Quesadillas
  • Best Slow Cooker Chicken Tacos

We made the Instant Pot Russian Shredded Beef Sandwiches tonight with some french fries and brussel sprouts.

My Freezer is FULL.  Looking forward to having some meals ready for the busy weeks coming up.
