We had only a few things on the agenda for the weekend. Saturday we had a birthday party to go to. Monday I have to work part of the day. That leaves today to try and get a few things done in preparation for the first week of school – actually, the school year.
I have a few meals that I have prepped and are ready to be cooked or put into the crockpot for an easy dinner. Yesterday before we went to the party, I put 2 pounds of ground beef together into a crockpot meatloaf and 15 meatballs for another meal (or two) were flash frozen. This morning I spent the last two hours making piles of waffles for the kids and using this new recipe (as soon as I remember where it came from I’ll link it) made a double batch of Oatmeal Blender Waffles. These smell GREAT and I think will be a great quick breakfast for me (and maybe the kids since I can’t get them to eat oatmeal but they might eat it with syrup and chocholate chips.
Friday night I cooked chicken breast in the crock pot. I should have enough for 2 meals of chicken and dumplings and 2 meals of chicken taco salads.
Here’s the meal plan for the week:
1) Chicken / Dumplings ( we had this tonight. The kids all complained that they didn’t want to eat cuz they wanted to watch tv. when they finally sat down, all 4 started eating and all you could hear was the fork hitting the plates. After about 5 minutes Amalia said “this is so good I can’t even talk cuz I don’t want to stop eating! – it is better than restaurant dinners!” After we all agreed that it was really yummy, the rest of them finished it in 5 minutes flat! – so glad I made a large batch and we should be able to have it again for leftovers dinner!)

It is better for me to not plan down to the day cuz I just don’t know what I will feel like eating each night but if I have 6 meals planned it helps after school much easier.Oatmeal Blender Waffles 4 c rolled oats; 3 c water; 2 small banana’s; 2 T oil; 2 t vanilla; 1/4-1/2 t salt: Mix ingredients into a blender and blend until smooth – let sit for 5-10 minutes and re-blend for a few seconds (the batter should be pourable but thick). Heat up the waffle iron and grease it. Place waffle batter on iron and cook until the steam stops (these will be thick). * Add 1-2 cups berries, 1 1/2 – 2 t cinnamon or 2 t sweetener before cooking per taste.
