A weekend of work…

and a little fun.  So, I am working this weekend and I arranged for the kids to go to the VCUHS daycare.  Yesterday I ended up working until nearly 4 pm just to see all of the patients (and didn’t get any of my paperwork done in my office). 

On the way home, we stopped at Walgreen’s which has a new REDBOX movie rental machine and we got a couple of movies for the night.  I tried out a new pizza dough recipe and it came out GREAT! 

Dough
1 1/2 cups water
1/4 cup olive oil
2 Tablespoons honey
4 1/2 cups flour
1 Tablespoon salt
1 Tablespoon yeast

As you can see if you follow the link, the directions for this dough use a bread machine.  I have a great bread machine but it takes up so much counter space that I rarely take it out.  This dough was so good that I may take it out and use it next week when Aunt Denise and the girls are here – think a one pan recipe might be great!

 Here’s how I made it:

Warm water and place it and olive oil in bowl with yeast.  when yeast begins to bubble, add in honey and salt.  then add in 4 1/2 cups of flour and knead until it is smooth.  Let sit on counter for about 10 minutes
When dough is ready (whichever way you make it), divide into portions. This makes six individual pizzas or three large. Shape each portion into a flat round. Place on a cookie sheet or pizza pan that has been greased and sprinkled with corn meal.

Spread pizza crust with sauce, add toppings and cheese and cook at 475 for 10 – 15 minutes.  I cooked them in my convection oven (and it only goes to 450)…they took close to 25 minutes and I switched the baking sheets from upper and lower racks once and turned the sheets around once!  I checked every 5 minutes after 15 minutes until they were done. 

Even Matthew had 2 pieces of pizza last night.

Today I slept until 7:30 …well, slept is not really a good description but I stayed in bed.  Then it was time to go back to work.  I dropped the kids back at VCUHS daycare and headed in.  I ate breakfast in my office and then headed into the hospital.  After I saw all of my patients, I headed back to my office and was thinking about doing some paperwork but…I got a new, annoying consult and headed back into work.  After that, I went to get a couple of things at CVS and picked the kids up.

We are home and relaxing before dinner.

One more week of service until VACATION.  I can’t wait.
