I’m on the lookout for easy, yummy, filling recipes for things I can bring in for breakfast. when I did my big baking weekend last month I made these pumpkin banana muffins which were pretty good but not…well not…WOW!
One of the websites I follow made these last week and I have been dying to try them. Yesterday before I did it, I loaded them into the WW recipe builder and they are 2 points per muffin! Cool – that means I can have 2!
Super Power Muffins
1 cup splenda (recipe called for brown sugar so you could use that if you weren’t trying to cut calories)
¼ to ½ cup peanut butter
1 banana
*optional ½ cup of apple sauce or carrot puree (I used No Sugar Added apple sauce – it definitely needed the liquid)
1 egg
1 cup whole wheat flour
1 tsp baking powder
1 tsp baking soda
½ tsp salt
*optional ¼ cup chocolate chips (NOT optional in my book – think Reece’s PB cup muffins!)
Directions:
Preheat oven to 350 degrees. Mix all dry ingredients well and set aside. Blend everything else and then sift in dry ingredients. Spray muffin tray. Bake for 15-18 min. Makes 12 – double for 24.
WOW WOW WOW…you must make these tonight. I will not share with my kids (or any of you!)…these are all mine!
