This weeks theme at URS is Easter dinner. Growing up, my mom was always the one who had family and friends for all of the major holidays. Easter was no exception and while the meals were never fancy, there was always plenty of food and fellowship. Now that I live more than 10 hours away from my family, I rarely get to experience those holidays anymore but have tried to re-create my mother’s hospitality. The last few years it has been me, the kids and Wendy and her mom (and dad). This year we are going to drive to my sister Jean’s house. This is my favorite (and simple) dish for Easter.
Wendy’s Asparagus
Wash and break off the bottoms of 1-2 pounds of fresh asparagus (we all like it so occasionally make 3 pounds for us – just so that Riley doesn’t eat it all!)
place in a zip lock bag and pour several tablespoons of EVOO on top
sprinkle with a generous amount of coarse (or fine if that is all you have but I like coarse) salt
Zip up the bag and let sit in the refridgerator for a while
When you are ready to eat place the asparagus on a shallow (cookie sheet works great) baking dish and broil for 3-5 minutes (watch for smoke if you put a lot of EVOO on it!)
Place on a bowl in the center of the table and WATCH OUT!!!
